Chili

Also known by some as “vegetable stew”, the large amount of chili powder in the dish pushes it into the “chili” category.

Easily doubles, but use a big pot.

12 ounces bacon

1 large onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

6 cloves garlic, minced

1 jalapeno, minced

2 tablespoons chili powder

1 teaspoon cumin

1/2 teaspoon cayenne pepper

1 lb 85% lean ground beef

1 lb ground pork

6 oz olives, sliced

1 15.5 oz can black beans

1 15.5 oz can pinto beans

1 15.5 oz can kidney beans

1 15.5 oz canned corn (or 2 fresh ears, kernels cut off the cob)

1 14 oz can crushed tomatoes

1 14 oz can diced tomatoes

1 bay leaf

1 tablespoon brown sugar

1/4 cup dry red wine (or broth)

 

For topping

shredded sharp cheddar cheese

lime wedges
